125g white sugar
1 pinch of salt
125gr flour 0
Heat the eggs and sugar in a bain-marie up to 50 degrees, then pour in a planetary mixer and whisk by adding the sifted flour by hand. Bake in ventilated oven at 180 degrees for 30 minutes in pre-buttered mold.
